Egg Muffins
makes 6 Muffins
nut free, gluten free, sugar free, healthy
Ingredients
5 eggs
salt and pepper, to taste
MIX AND MATCH FILLINGS
spinach, chopped
tomato, diced
onion, diced fine
mushroom, diced
capsicum coloured pepper, diced fine
broccoli, cut into small florets
parmesan cheese and/or cheddar cheese
butter to grease
Method
Preheat oven to 350°F (180°C).
In a measuring cup, beat the eggs until smooth. Season with salt & pepper. Set aside.
In a butter greased muffin tin, place your desired combination of fillings into each muffin cup.
Pour the beaten eggs into each muffin cup until the liquid reaches ¾ of the muffin cup.
Bake for 20 minutes, until set.
