Healthy Banana Pancakes

makes 6 large pancakes or 12 small

low fat, gluten free, clean eating friendly, refined sugar free, healthy, nut free

Ingredients

1.5 Cups Oats

1 Ripe Banana

1 Cup of Milk or Dairy free milk alternative

1 tsp Cinnamon

1 Tbsp Brown Sugar or Coconut Sugar

Method

Process oats into a flour consistency, then add in milk, sugar, cinnamon and banana and pulse/blend until its well combined and forms a thick but pourable batter. To cook the pancakes, preheat a non-stick frying pan on low to medium heat. If you don’t have a non-stick frying pan, grease with a little bit of oil (use a paper towel to spread it out and soak up the excess). Cook on the first side until you see bubbles and/or the rims of the pancakes become matte as opposed to being shiny. Flip, cook on the other side until nice and golden.
